Meatballs and Spaghetti Squash. Another great low carb option.
I often get asked, “do you have to cook separate meals for the boys?” My answer is ’no’ but sometimes I do a slight variation.
I made spaghetti squash for me and Dan since it was low carb day. I needed to carb load the boys because Mac was supposed to have an XC meet today, so I did pasta for them. The meet was canceled due to heat. 🥵 We are getting slammed with heat this week! It wasn’t labor-intensive, I cooked the squash in the oven and the pasta on the stove. Easy. That is the key for me.
To cook the squash I set the oven to 400 degrees. I placed parchment paper on a cookie sheet. Cut the squash in half. Scooped out the guts, I mean seeds. Brush each half with a little olive oil. Sprinkled with salt. Bake for 40-60 minutes, until edges are browned.
I will admit, I used frozen meatballs. Dumped them in a pot with Trader Joes Organic Tomato Sauce. I cooked them over medium heat for like 30 minutes. I don’t love frozen meatballs so I am on the hunt for an easy, gluten-free meatball recipe.
I made extra meatballs to repurpose for the boys lunches. They will be excited to see they have a yummy meatball sub for lunch!
